Across the first year, assess the nutritional profile and potential for bioactive compound identification of up to 100 Aboriginal food plants, in particular; sugars, proteins, vitamins, antioxidants, fibres, and glycemic index.
An experienced research scientist will work through online databases, laboratory testing, and compound identification to document the nutritional profile and potential bioactivity of up to 100 Aboriginal food plants. To date, there are only a few commonly used plants that have had full nutritional profiles developed. Where information does not exist, new assays will be performed for up to 30 plants (each plant analysis will cost approximately $1000 per sample). Information will be added to the database in project 1.
